It took me a while to find, but Beachbum berry seem to have a couple of cocktails with apple juice. The Shrunken Bum contains cinnamon powder... which you shouldn't just throw in a cocktail :-) So, here comes the modified cocktail that is drinkable:
- 1oz (3cl) lime juice
- 1oz (3cl) apple juice
- 1oz (3cl) Jamaican rum (Appleton Estate)
- 3/4oz (2,25cl) Demara 151
- 1/2oz (1,5cl) cinnamon syrup
Shake, pour, enjoy!

My favorite one! Don the beachcomber's zombie. Roughly as described in the brown book.
- 1 tsp brown sugar
- 2cl lime juice
- 1cl lemon juice
- 4cl pineapple
- 3cl 151 Demerara
- 3cl Matusalem White
- 3cl Matusalem 15
- 3cl passion fruit syrup
- 8dr angostura bitters
Key here: fresh pineapple, Lemon hart 151 and 2 other quality rums.
Start by removing the inner part of the pineapple.
Dissolve the brown sugar in the lemon and lime juice. Add all the other ingredients and shake with ice. Pour in the pineapple and finish with a mint spring. Enjoy!

French Frog is another creation of Manuel Wouters. This is how I make it (if you want to know how Manuel makes it, buy his book :-) ):
- 3cl (1oz) lemon juice
- 1tsp lavender
- 4,5 (1 1/2oz) Hendrick's Gin
- 1tsp sugar cane
Dissolve the sugar in the lemon juice. Add the lavender and muddle. Add the gin and shake. Double strain in a collins glass, add ice and fill up with tonic

I'm not so sure about cocktails and fresh egg white, but I have to try this at least once, right? So here we go, 'Delicious Sour':
- 1 egg (egg white needed)
- 3cl (1oz) lime juice
- 1tl powder sugar
- 3cl (1oz) Peach Brandy
- 4cl (1 1/3oz) Calvados (Pere Magloire for instance)
Dry shake everything. Then shake again with ice. Strain and I have to admit, this cocktail is not bad!

I found this very simply, yet very sweet cocktail in Trader Vic's 1946 book of food and drink book. Key here, are the right ingredients. Brugal rum and lemon juice are simple. The honey is what makes the difference in this cocktail!
- 2-3tsp honey (the book recommends 1 tsp)
- 1,5cl (1/2oz) lemon juice
- 4,5cl (1 1/2oz) Brugal rum
What kind of honey do we need, well, home made honey of course (thanks Bram!)
Dissolve the honey in the lemon juice. Add the Brugal and shake.

18 months ago, Fien got me Manual Wouters book for my birthday. I think I've made all of the cocktails in the book, and the success rate of these cocktails is very high (I think the highest of all books I have).
One of them is called lazy red cheeks(one of his own creations) and no doubt this is the best strawberry cocktail out there. Here is how I make the cocktail:
- 6 strawberries
- 1tbs cane sugar
- 4 cl (1 1/3 oz) fresh lime juice
- 1cl (1/3oz) violette syrup
- 4,5cl (1 1/2oz) Absolut vodka)
Dissolve the cane sugar in the lime juice, then put everything in a blender and blend for 10 sec. Pour in a glass and add ice

I have a ton of books, but for a reason I don't understand there aren't any blueberry recipes in there. Even google doesn't really gives me interesting stuff. So let's keep it simpe and try something out. Let's call this one the Blueberry daiquiri.
- 9cl (3oz) blueberries
- 4,5cl (1 1/2oz) Matusalem 15
- 2tsp powdered sugar
- 2cl (2/3oz) lemon juice
Muddle the blueberries. Add the other ingredients and shake with ice cubes. Double strain.
If someone can find a more interesting recipe, please let me know!

These plants are hardly a year old. 3 plants give me just enough for a couple cocktails. So what to make with fresh blueberries? Let's try something out...
- 9cl (3oz) blueberries
- 1,5cl (1/2oz) tequila silver
- 1,5cl (1/2oz) lemon
- 1,5cl (1/2oz) lime
- 0,75cl (1/4oz) honey
Dissolve the honey in the lemon and line. Blend everything with ice cubes.
(Not a lot of alcohol in this one, very balanced cocktail)

I really wanted to make a "fin de saison" but I hate cucumber so I do not have that here.
Next one Basil Gin Fizz... like
- 3-4 basil leaves
- 2cl (2/3oz) lemon
- 1tl honey
- 4,5cl (1 1/2oz) Hendrick's gin
- 3oz club soda
Dissolve the honey in the lemon. Add the basil and muddle. Pour in a long drink glass and add ice cubes. Fill up with club soda.
